  • Molecular mechanisms underlying probiotic and biotechnological  features of foodborne bacteria
  • Resistance mechanisms to pathogenic infection in tomato roots and thermal stress mechanisms in tomato anthers
  • Molecular aspects of different human diseases
  • Development and application of molecular profiling strategies based on MALDI-TOF-mass spectrometry to identify and discriminate foodborne bacteria, for food authentication and fraud detection of trade products
  • Structural characterization of  food proteins by means of mono and bidimensional electrophoresis (1/2-DE) and tandem mass spectrometry coupled with nano-liquid chromatography (nanoHPLC-ESI/MS/MS)
  • Structural studies of native gliadin peptides and gliadin peptides modified by a transamidation reaction catalyzed by a microbial transglutaminase by 1/2-DE and  nanoHPLC-ESI/MS/MS to clarify the molecular basis of Coeliac Disease and design enzymatic strategies to detox flour
