Researcher Activities

The activity of dr. Mamone is focused on the isolation and structural characterization of molecules and macromolecules with interest in food sciences, by means of advanced high performance separation techniques and mass spectrometry. More specifically, main part of the activity of Dr. Mamone is focused on the study of proteins under several aspects: 1. proteomics applied to the study of food related proteins; 2. proteolytic events in foods; 3. identification of bioactive sequences generated from food proteins (bioactive peptides); 4. characterization of post-translational modifications of proteins; 5. development of new methodologies in proteomics.
