Attività di Ricerca

L’attività del dott. Mamone si occupa dell’isolamento e della caratterizzazione strutturale di molecole e macromolecole con interesse per le scienze degli alimenti, mediante tecniche avanzate di separazione ad alte prestazioni e spettrometria di massa. Più in particolare, la parte principale dell’attività del Dr. Mamone è focalizzata sullo studio delle proteine sotto diversi aspetti: 1. proteomica applicata allo studio delle proteine alimentari; 2. eventi proteolitici negli alimenti; 3. identificazione di sequenze bioattive generate da proteine alimentari (peptidi bioattivi); 4. caratterizzazione di modificazioni post-traduzionali di proteine; 5. sviluppo di nuove metodologie in proteomica.
