Research Interests

Research activities mainly concern: i) microbial, food and plant proteomics, ii) development and application of molecular profiling strategies based on MALDI-TOF mass spectrometry for food authentication, iii) structural characterization of peptides and proteins by mass spectrometry. Microbial proteomic studies are mainly aimed at identifying proteins, metabolic pathways and molecular processes involved in conferring probiotic features and elucidating stress response mechanisms in technological bacterial species. Plant proteomics is applied to investigate stress response mechanisms and pathogen-host interaction. As molecular profiling strategies, research activity is focused on the development of rapid and reliable methods to define biomarkers of food authenticity by MALDI-TOF MS analyses of protein extracts from fresh and processed food. The method has been applied in seafood analysis, in particular to species authentication, verification of commercial product authenticity and detection of fraudulent substitutions. Similarly, the method was used for European hazelnut cultivars authentication and the potential detection of hazelnut in nut mixtures or in nut containing products. Structural analyses by nano-HPLC–ESI-MS/MS are currently targeted to define modifications induced in gliadin peptides (recognized as celiacogenic epitopes or target of detoxification strategies to reduce wheat flour gluten immunogenicity) by site-specific deamidation and transamidation reactions catalyzed by tissue and/or microbial transglutaminase.
