In particolare, lo Spoke 3 si propone di: <em>i<\/em>) valutare i rischi nuovi, emergenti e riemergenti all&#8217;interno del sistema alimentare; <em>ii<\/em>) sviluppare strategie innovative per garantire la salubrit\u00e0 e sicurezza degli alimenti; <em>iii<\/em>) comprendere l&#8217;applicabilit\u00e0 e l&#8217;uso sicuro dei \u201cnovel foods\u201d.<\/p>\n<p style=\"font-weight: 400; text-align: justify;\">I ricercatori dell\u2019ISA-CNR stanno contribuendo all\u2019implementazione di due schede progettuali, quali:<\/p>\n<ul style=\"text-align: justify;\">\n<li>Strumenti innovativi per la rilevazione, l&#8217;identificazione e la caratterizzazione rapida e multipla dei pericoli biologici e chimici nei prodotti alimentari di base (DIC_BioHaz).<\/li>\n<li>Applicazione di processi biotecnologici innovativi su proteine vegetali per la mitigazione del rischio negli alimenti\/bevande (BIOPRO).<\/li>\n<\/ul>\n<p style=\"font-weight: 400; text-align: justify;\">In particolare, le attivit\u00e0 di ricerca dell\u2019ISA riguardano l\u2019uso di approcci MultiOmics per la valutazione dei contaminanti alimentari nei nuovi ingredienti e nelle tecnologie di trasformazione alimentare e la valutazione dell&#8217;allergenicit\u00e0 e della tossicit\u00e0 di prodotti alimentari vegetali tramite test in vitro e in vivo. Inoltre verr\u00e0 applicato su scala pilota un processo enzimatico per detossificare il glutine e saranno sviluppati e testati prototipi innovativi di pasta, pane e barrette di cereali per caratteristiche immunitarie, sensoriali e tecnologiche.
