Nello specifico lo studio ha riguardato l\u2019identificazione degli allergeni delle arachidi resistenti al processo di digestione gastrointestinale. La stabilit\u00e0 delle proteine allergeniche alla digestione \u00e8 stata valutata sull\u2019intera matrice alimentare sia da arachidi crude che tostate. Gli allergeni derivanti dal processo di digestione, sono stati caratterizzati mediante analisi proteomica e immunologica. Lo studio \u00e8 stato effettuato in collaborazione con il gruppo della dott.ssa Sandra Denery-Papini dell\u2019 INRA (Institut National de la Recherche Agronomique) in Nantes (Francia). I risultati ottenuti hanno permesso di identificare le proteine\/peptidi responsabili dell\u2019allergia alle arachidi, aprendo in questo modo la strada a nuovi approccio terapeutici. L\u2019attivit\u00e0 di ricerca della dr.
